Maido — a Japanese greeting meaning welcome — sets the tone from the very first moment. In the elegant dining room at Calle San Martín 399 in Miraflores, Lima, every guest is received with this warmth, embodying a philosophy that runs far deeper than hospitality. This is the world's best restaurant in 2025, as named by The World's 50 Best Restaurants, and a place where two cultures meet, breathe, and create something entirely their own.
The roots of Maido stretch back to 1889, when chef Mitsuharu 'Micha' Tsumura's ancestors journeyed from Japan to Peru. Born in Lima, Tsumura completed a culinary arts programme in the United States before travelling to Osaka to deepen his mastery of Japanese cuisine. In 2009, he returned to Lima and opened Maido, fusing Japanese techniques with the extraordinary diversity of Peruvian ingredients — giving shape to what is now celebrated as Nikkei cuisine.
As Tsumura himself reflects: "Life is movement. Nothing is static or absolute… Like family trees, cuisines are constantly being redefined, their identities enriched by an intense intercultural exchange." That philosophy remains the heartbeat of every dish.
Guests choose from four tasting menu experiences — with or without wine pairing — each featuring more than ten courses that evolve with the seasons. Signature creations include The Triple, a composed bite of avocado, egg, tomato and chashu braised pork belly; caracoles al sillao, sea snails with yellow chilli foam and Nikkei sauce; and squid ramen with Amazonian chorizo and duck dumpling. An à la carte menu, anchored by the catch of the day and seasonal produce, is also available.
Increasingly, the kitchen turns its gaze toward the Peruvian Amazon — incorporating sustainable paiche fish, palm heart, yucca with Amazonian beans, and pork jowl wrapped in delicate jaune parcels that honour rainforest tradition.
Maido's ascent has been remarkable. A fixture in The World's 50 Best Restaurants since 2013, the restaurant has claimed the title of Latin America's Best Restaurant four times and was named The Best Restaurant in South America in 2024. Chef Tsumura received the Estrella Damm Chefs' Choice Award 2024, voted by his peers. In 2025, Maido reached the pinnacle: The World's Best Restaurant, sponsored by S.Pellegrino & Acqua Panna.
