On the 29th floor of The Wellington in Central, Wing began as something far more intimate — an invite-only, midnight-supper test kitchen operating one floor above chef-owner Vicky Cheng's debut Hong Kong restaurant, Vea. What started as private experimentation has since become one of the most talked-about Chinese fine-dining destinations in the world, ranking #11 on The World's 50 Best Restaurants in 2025.

Cheng spent two decades mastering French classical cooking before returning to his birthplace of Hong Kong. He never set out to open a Chinese restaurant. Yet something shifted upon coming home — a pull toward local tastes, toward the stories embedded in China's culinary history that rarely get told. Wing, drawn from Cheng's own Chinese name, carries the meaning of hope and perseverance. Both sentiments run through everything on the plate.

A Seasonal Tasting Menu Without Rules

Wing's approach to Chinese fine dining is described as "boundary-less" — a contemporary interpretation that pays homage to the eight great Chinese regional cuisines without being bound by any single one. The seasonal tasting menu is the vehicle through which Cheng traces this culinary history, course by course.

The kitchen's obsessive attention to craft is evident in the details. A dry-aged crispy Cantonese chicken required more than 80 trials before reaching the table. Smoked pigeon arrives with sugarcane. A braised sea cucumber, rendered to resemble a slab of pork belly, is enveloped in a puffed spring roll. The meal closes with a fruit trolley service — a considered, unhurried final act.
