A West Coast Institution with an Unlikely Past

Before it became one of the most talked-about beachfront restaurants in Barbados, The Lone Star was a gas station — one of the first on the island. That origin is quietly honoured throughout the property: each of the seven hotel rooms carries the name of an automobile legend, from the Lincoln penthouse to the Cadillac and the Studebaker. The history gives the place a character that no amount of interior design can manufacture.

Situated on the west coast beach in the exclusive St James area, surrounded by lush tropical gardens, The Lone Star sits where the Caribbean Sea does most of the decorating.

The Restaurant

A magnificent staircase leads down into a relaxed dining area that has earned a reputation as a prime spot for people-watching. The kitchen works from a focused, simply presented menu — flavour-driven and precisely executed — drawing on the best available ingredients to blend European and British cooking with Caribbean and Asian influence. It is the kind of food that lets quality speak for itself rather than hiding behind complexity. That approach earned The Lone Star a place among the World's 50 Best Restaurants back in 2002, a remarkable distinction for a beachside table and a testament to how seriously the kitchen takes its craft.

The Caribbean and seafood focus runs through the menu naturally, shaped by the island's larder and the ocean just beyond the terrace rail.

The Bar

Executive Mixologist Orwin Findlay oversees a cocktail list that ranges from the house Lone Star Rum Sour — Mount Gay Eclipse Rum, sugar syrup and lime — to the Bentley, built on Hendricks Gin and Laurent Perrier Brut. Barbados rum is the thread that runs through many of the signatures, as it should be. The bar is open from sunrise to sunset and beyond, with chilled draft beers and fine champagnes alongside the cocktails, all consumed to the sound of the waves. The dress code is elegant; the atmosphere, by all accounts, is anything but stiff.
