The story
The name says it all. Heimat is a German word for the emotional bond you carry toward the place where you belong — and at Restaurant Heimat on Utrecht's Biltstraat, that feeling is translated directly onto the plate. The kitchen draws its identity from what grows and flourishes in the surrounding landscape, working with a fixed network of producers and growers who share the restaurant's commitment to the wellbeing of animals, people and the planet.
Niels van Zijl is the driving force here — ambitious and idiosyncratic, qualities that suit his hometown of Utrecht well. Before opening Heimat, he led the kitchen at restaurant DeZusters in Maarssen, and in 2022 Gault&Millau named him their New Chef on the Block. His foundations were laid at some of Europe's most respected addresses: the three-Michelin-star De Librije in Zwolle and the two-star Kadeau in Copenhagen. That pedigree shows in the precision of his European cuisine, even as the cooking stays rooted in the local and the seasonal.
Heimat runs a chef's menu format that shifts with the day. On Wednesday and Thursday evenings, guests can choose between a compact or complete chef's menu (€64 or €94 per person). Weekend evenings offer only the full menu, while Friday through Sunday lunches feature a dedicated lunch menu at €74 per person. Local dairy and grains form the backbone of the cooking — so much so that gluten- and lactose-free menus are not available.
The wine list earned Heimat a Wine Spectator Award of Excellence in 2025, recognition that reflects the seriousness with which the team approaches pairing. Guests can explore the list with the sommelier or trust the house suggestions. For those who prefer to skip the wine, house-made non-alcoholic drinks and a selection of beers and ciders are also offered alongside the European cuisine.
Private dining for groups of six to twelve is available, and the restaurant welcomes reservations from Wednesday evening through Sunday lunch.
