Crafted with passion, served with love

Traditional Italian Cuisine, Honestly Done

On Utrechtsestraat 96, in the heart of Amsterdam, Segugio has built a reputation for Italian cooking that takes its roots seriously. The name itself signals intent — and the kitchen follows through with ingredients imported directly from Italy, homemade pasta, and a wine list personally curated by the restaurant's sommelier. Gambero Rosso, the authoritative Italian food and wine guide, awarded Segugio 2 forks, a recognition that carries particular weight for an Italian restaurant operating outside Italy.

What's on the Plate

The menu moves through the full arc of an Italian meal without shortcuts. Antipasti include a Tagliere di Segugio — a sharing board of premium charcuterie, selected cheeses, homemade bruschetta, olives and grilled vegetables — alongside a carpaccio of smoked trout with crayfish and caviar, and a burrata served with rocket, tomato and roasted bell pepper.

Pasta is made fresh in-house. The Ravioloni come filled with green asparagus and ricotta-mascarpone, finished with a parmesan and cashew nut sauce. Pacceri al Mare brings together prawns, squid and peas. For truffle lovers, the risotto with mushrooms and fresh black truffle is a fixture on the menu. Among the secondi, a Creekstone Farm flank steak arrives with wine reduction, Parmigiano Reggiano and roasted potatoes, while an oven-baked sea bass fillet is paired with pear, beetroot-lemon pesto and pistachio.

The four-course Menu dello Chef — burrata, risotto, a choice of meat, fish or vegetarian main, and dessert — offers the clearest picture of what the kitchen does best, and is available with a wine pairing.

The Setting and the Wine

The dining room has a warm, contemporary feel that suits both a pre-theatre pasta before a show at Carré and a longer evening with friends or colleagues. The Italian cuisine here is matched by a wine list that spans DOC regions across the peninsula, from a Valdobbiadene Prosecco DOCG to Franciacorta from Ca' del Bosco and regional bottles from Calabria, Puglia, Marche and beyond. The restaurant also accommodates private parties, making it a practical choice for business dinners or family gatherings alike.
