On a quiet canal street in Amsterdam's Jordaan, Quattro Gatti has been the project of one man since 2006. Chef-patron Milos Pesole runs the kitchen alone — tutto fatto in casa dalla A alla Z, as the restaurant's own motto puts it. Every dish is made by his hands, from scratch, with ingredients often sourced directly from Italy. That single-minded commitment earned Quattro Gatti recognition from Gambero Rosso, Italy's most authoritative food guide, placing it firmly on the map of serious Italian dining in the Netherlands.

The Chef Behind the Kitchen

Milos Pesole was born in Turin to a family from Bari — a background that gave him roots in both northern and southern Italian cooking. At fifteen he was already working at Baratti, Turin's most celebrated pastry shop, while studying at the city's Hotel School. He went on to train under chefs Dario Broglia, Fulvio Platini, and Pascal Jalhay across restaurants and luxury hotels in Italy, Spain, the Netherlands, Singapore, and the Pacific Islands. By twenty-six he was Head Chef at an Italian restaurant inside a five-star hotel in French Polynesia.

That breadth of experience feeds a focused, disciplined philosophy. "It's the true flavor of quality ingredients that gives the intense thrill," he says from his open kitchen. "I treat them only with respect." Ancient recipes, meticulous sourcing, and a pure approach to flavor are the constants — never shortcuts, never pizza.

What to Expect at the Table

At lunch, Quattro Gatti is known for its fresh pasta made a la minute — rolled and shaped in front of guests after ordering. The open kitchen means the process is fully visible, unhurried, and deliberate. The atmosphere is intimate rather than formal: no dress code, though smart dressing is appreciated.

For groups, the restaurant transforms into a private dining space — chef's table evenings, birthday dinners, and organized gatherings where the room becomes entirely yours. Quality ingredients and wines, a quaint setting, and the undivided attention of a sole chef make these evenings a particular draw.

Quattro Gatti is, in Pesole's own words, a place where "the simplicity of the dishes is the result of careful attention" — Italian cuisine stripped to its essentials, handled with the kind of care that only a chef cooking every plate himself can offer.
