The story
nNea describes itself as "the New Neapolis, the metropolis of a new pizza era" — and that framing is more than branding. Founded in 2019 by chef Vincenzo Onnembo and entrepreneur Limau Chen, the Amsterdam pizzeria set out from day one to embrace what they call the renaissance of pizza: not a nostalgic reproduction of tradition, but a living, evolving conversation with it.
The result has earned serious recognition. Gambero Rosso awarded nNea its top 3-spicchi distinction, placing it among the best Italian restaurants outside Italy. The international guide 50 Top Pizza has ranked nNea number one in the Netherlands, number seven in Europe, and among the top 50 pizzerias in the world — a distinction the restaurant has held for four consecutive years.
What separates nNea from a typical pizzeria is the obsessive attention to fermentation and flour. The team is explicit: pizza is not fast food. Their dough is the product of ongoing research, built on quality flours from Molino Denti in Italy, blended with local Dutch Emmer (Triticum dicoccum) and Einkorn (Triticum monococcum) — ancient grains grown close to home. Purified water and, above all, time complete the process, producing what they describe as a light, fluffy cloud of dough with no additives.
Ingredients follow a dual logic: seasonal and local where possible, but uncompromising when rarity demands it. Tomatoes grown on volcanic soil — the kind you can only source from southern Italy — make the cut precisely because nothing else compares.
The philosophy at nNea is one of "contamination" — a deliberate bridging of southern Italian Neapolitan cuisine and the Dutch producers and ingredients that surround the restaurant in Amsterdam. That tension between rootedness and curiosity is baked into every element of the operation, from the flour blend to the menu.
The main restaurant at Bilderdijkstraat 92 seats guests for dine-in, with 25% of tables held back for walk-ins even when reservations are full. A second location, nNextDoor at number 94A, handles takeaway only — open seven days a week from 17:30 until the dough runs out.
