A Saltillo Original

Don Artemio is, by its own definition, a 100% Saltillo proposition — a restaurant rooted in the land, the flavors, and the culture of northeastern Mexico. The kitchen draws on local and regional ingredients to interpret traditional Mexican cuisine with care and precision, striving, in the words of chef Juan Ramón Cárdenas Cantú, to "build flavor" — because, as he puts it, that is the principal function of a cook.

The Chef

Juan Ramón Cárdenas Cantú holds a degree in Food Industries Engineering and a Master's in Business Administration, both from the Instituto Tecnológico y de Estudios Superiores de Monterrey (ITESM). That combination of technical grounding and operational discipline shows in an operation that has pursued excellence steadily since opening day — work recognized in 2023 when Wine Spectator granted Don Artemio its Award of Excellence, a mark of distinction for the depth and quality of the restaurant's wine program.

The Space

The architecture is an homage to the desert and to Saltillo's domestic heritage. Three distinct environments shape the experience: a wine cellar housing more than 30 exclusive labels from Coahuila's own wine country; a loom room (el telar) inspired by the traditional saltillense house, with a spectacular communal table for up to 40 guests; and an open patio where the singular sunsets of the desert become part of the meal.

Culture on the Table

Beyond the plate, Don Artemio carries a strong cultural identity. The restaurant hosts national gastronomy festivals — bringing guest contributors from Oaxaca to Sonora to celebrate Mexico's breadth of culinary tradition. It also maintains an exclusive collection of works by Artemio de Valle Arizpe, the Saltillo-born writer who lends the restaurant its name. And from the bar, the house mezcal Ojasé — an infusion of hand-collected desert herbs — offers a distinctly local pour that no imported spirit could replicate.

The result is a place where Mexican cuisine is not a backdrop but the entire point: local, considered, and genuinely proud of where it comes from.
