Inside a handsome 19th-century casona on the landmark Paseo de Montejo, K'u'uk has spent more than a decade doing something quietly radical: treating Yucatecan cuisine as a living discipline worth researching, celebrating, and protecting. What was once a summer villa — Villa Donata — now houses just 16 tables spread across its original rooms, seating 42 guests in an atmosphere that feels intimate rather than theatrical.
The restaurant is shaped by two principals. Chef Pedro Evia drives the culinary program, working at the intersection of ancestral Maya technique and contemporary creativity. Eduardo Rukos oversees the full experience, from concept to execution. Together with chef Miguel Benitez and a dedicated team, they collaborate daily with local producers and artisans across the Yucatán region — a commitment that shows up directly on the plate.
That commitment extends to sustainability: K'u'uk sources ingredients responsibly, composts, recycles, and works to reduce food waste, treating environmental stewardship as part of the restaurant's identity rather than an afterthought.
Two distinct menus anchor the experience. The tasting format — the Experiencia Creativa — draws on the restaurant's in-house culinary laboratory, where the team tests techniques and merges ancestral ingredients with modern approaches. The à la carte menu, Sabores del Mundo Maya, leans into traditional Yucatecan flavors designed for sharing at the center of the table.
One dish that has become a signature is the Esquite Pibinal: corn cooked underground in the pib tradition, served with xcat'iik chile mayonnaise, butter-heart cheese, and ground chile.
