Ardente is direct about the standard: a true Neapolitan pizza can only be made by a professional pizzaiolo. The dough must be soft and elastic, fold easily, and carry the flavor and aroma of a well-fermented mass baked in a wood-fired oven. The recommendation is unambiguous — eat it straight from the oven.
The menu reflects that philosophy with precision. The Marinara D.O.P. uses San Marzano D.O.P. tomato sauce, garlic, oregano, and extra virgin olive oil — nothing more. The Margherita Bufalina layers San Marzano D.O.P. sauce with D.O.P. Buffalo Mozzarella and Parmigiano. The house Ardente adds spicy Calabrese salami and peperoncino to the classic base. For something richer, the Quattro Formaggi combines mozzarella, Parmigiano, gorgonzola, and smoked provolone. The Frutti di Mare brings clams, mussels, and shrimp onto an Italian tomato base — a less common but well-executed option on a Neapolitan pizza menu.
What started as a single address has grown to three locations: the original Pedregal spot on Blvd. de la Luz 777 in Jardines del Pedregal, a second in Hipódromo Condesa on Laredo 13, and a third in Roma Norte on Tonalá 144. Each carries the same certification and the same commitment to Neapolitan pizza made the right way.
