The premise is straightforward and confident: Mediterranean seafood prepared with the simplicity and precision that define Greek cuisine, brought into conversation with the extraordinary local bounty of Baja California Sur. The kitchen sources daily from the Sea of Cortez alongside fish flown in from around the world, and the team guides guests through selecting the right catch for their meal — a ritual that feels as much Greek taverna as it does resort dining.

Signature dishes from the global Milos repertoire travel intact to the Baja coast. Chef Costas' celebrated tower of lightly fried zucchini and eggplant, served with kefalograviera cheese and tzatziki, is here. So is the raw bar, where jewels of the sea arrive on the half shell with a shallot and lime Mexican mignonette — a small, precise detail that signals exactly how thoughtfully the two culinary worlds have been joined.

Breakfast adds another dimension. The Milpa's Omelette — squash blossoms, Oaxaca cheese, salsa verde and huitlacoche, the prized Mexican truffle — is the kind of dish that could only exist at this particular intersection of cultures.
