The story
At kilometer 83 of the Tecate–Ensenada highway, a more than 200-year-old oak tree anchors one of Mexico's most singular dining experiences. Animalón was conceived by acclaimed chef Javier Plascencia as an extension of how he likes to welcome guests — unhurried, rooted in place, and entirely attuned to the landscape of Valle de Guadalupe, Mexico's most important wine-growing region, responsible for 80% of the country's wine production.
The setting is not incidental. The Valle's cheese makers, olive oil producers, organic gardens, animal farms, and the seafood bounty of the Pacific coast all feed directly into what arrives at the table. Plascencia, whose culinary career spans over 30 years and who carries a James Beard Award nomination, built Animalón on that abundance — and on the conviction that fine dining and a sense of place are inseparable.
Executive Chef Oscar Torres has been the culinary force at Animalón since its second season in 2018. An East Los Angeles native who grew up in his family's seafood restaurant before earning a scholarship to the Restaurant School at Walnut Hill College in Philadelphia, Torres trained under Michelin-starred chefs including Christophe Émé and Tony Esnault. His cooking draws on a wide global frame — Mediterranean, Franco-Afrique, Indian, and Southeast Asian influences — applied to ingredients sourced from nearby farmers and markets. The menu changes constantly to reflect that creativity and the rhythm of the seasons.
Together, Plascencia and Torres brought Animalón a Michelin Star in the Michelin Guide Mexico 2024. Torres was also named among Food & Wine Mexico's 10 Best New Chefs in 2023 and received the Chef Promesa del Año award from MexBest that same year.
Animalón offers a seasonal tasting menu — five or eight courses — built around local Baja ingredients, with a vegetarian and vegan version available on request. The format is deliberately immersive: tickets are purchased in advance and include the full meal, with Baja wine pairings available separately.
The wine program is curated by Lauren Plascencia, Wine Director and sommelier certified as a French Wine Scholar and WSET Level 3. Her list focuses on the wines of Baja California and has earned the Wine Spectator Award of Excellence since 2023, as well as the Sommelier Award from the Michelin Guide Mexico 2024 — a recognition that places Animalón among the very few restaurants in Mexico honored for both kitchen and cellar.
Thirty minutes from Ensenada, the Valle is home to over 100 wineries alongside producers of cheese, olive oil, and craft beer. For a chef, it reads like a pantry with no ceiling. Animalón's seasonal approach treats this geography as its core ingredient — the oak tree above, the volcanic soil below, and the Pacific fog that drifts in from the coast all shaping what ends up on the plate.
