Mezcal is the signature restaurant of Montage Los Cabos, set along the shores of Santa Maria Bay in Cabo San Lucas. The kitchen draws on generations-old family recipes to present Mexican cuisine with genuine depth — not a stylized approximation of it, but a thoughtful ode to the country's diverse culinary traditions, from the Baja coastline to the interior highlands.

The Room and the Atmosphere

The design is deliberate and telling. Floor patterns trace the graceful lines of agave plants, a quiet nod to the restaurant's namesake spirit and its extensive agave-based bar program. Colorful décor and bright accents set a vibrant tone, while live music adds energy without overwhelming conversation. Guests can choose between the main indoor dining room or the Mezcal Patio, where an outdoor fire pit makes evenings feel unhurried, and the lush lawn offers a calming backdrop during the day.

From Breakfast Through the Bar

Mezcal serves both breakfast and dinner daily. Mornings bring everyday staples alongside dishes with an authentic Mexican twist — local flavors worked into eggs, fruits, and smoothies. Come evening, the menu shifts to starters, traditional tacos, and larger plates meant for sharing, giving the table a chance to move through the rich, layered tastes of Mexican cuisine at its own pace. The bar opens at six and runs until midnight.

Wine Spectator recognized Mezcal with its Best of Award of Excellence in 2022, a reflection of the care put into the beverage program. Regionally sourced wines sit alongside an impressive selection of tequilas, mezcals, and sotol — spirits that are treated here as seriously as the food.

The Agave Experience and Beyond

The bar program goes well beyond pouring. The Agave Experience — a guided tasting of tequila, mezcal, and sotol led by the restaurant's mixologists — offers a structured way to understand Mexico's agave-spirit tradition before sitting down to dinner. Cocktail-making sessions, tequila tastings, Mexican wine tastings, and cooking classes (covering tamales, mole, Baja ceviche, churros, and more) round out an offering that extends Mezcal's Mexican cuisine well into hands-on territory.

Sustainability at the Table

Mezcal's commitment to the region includes its environmental footprint. The resort's 1,470 solar panels partially offset the restaurant's electricity consumption — a practical, measurable step that aligns with the sourcing ethos already present in the kitchen and behind the bar.
