At the heart of Waldorf Astoria Los Cabos Pedregal, Don Manuel's opens its wall of windows to the Pacific, letting the panoramic ocean views become as much a part of the meal as what arrives at the table. The restaurant's philosophy is rooted in an honest respect for Mexico's culinary heritage — marrying ancient and contemporary techniques to reimagine the flavors of the region — and the result earned it a Forbes Travel Guide Four-Star rating.

Chef Manuel Huerta

The kitchen is led by Chef Manuel Huerta, born and raised in Guanajuato, Mexico. With more than seven years at Waldorf Astoria Los Cabos Pedregal and previous experience at Grand Velas Riviera Maya, Huerta brings a deep familiarity with Mexico's regional pantry to an eclectic, seasonal menu. His approach is anything but static: dishes rotate with the seasons, and the family-style service — an ode to the way Mexico actually eats — encourages the table to share rather than silo.

The Travesía Experience at Su Cocina

The most distinctive way to experience Don Manuel's modern Mexican gastronomy is through Travesía, a nine-course private tasting menu held at the restaurant's colorfully tiled Su Cocina around a long live-edge table. The format takes the taco — Mexico's most beloved street food — and traces it back to its regional roots, course by course. Think blue prawn with chintextle, the smoky Oaxacan chili paste, or a scallop tostada layered with uni pâté and crumbled chorizo. Cocktail pairings are worth ordering alongside.

On the main menu, standout plates have included smoked pibil lobster tail with confit garlic sauce and sweet cured amberjack with hibiscus sauce, cucumber, avocado, and chamoy-hibiscus gel. For dessert, cinnamon-sugar churros with cajeta and chocolate sauce remain a classic, while the Chocolate Craving — chocolate fudge, buttermilk-cocoa cake, cacao nibs, mezcal ice cream, and sesame tuile — rewards the more adventurous.

The Bar and Private Pedregal Collection

Don Manuel's bar produces handcrafted cocktails that draw on the flavors and spirits of Baja California. The property's wine program, led by its wine director, goes further: the Private Pedregal Collection features bespoke blends developed in collaboration with Mexican wineries Roganto and Don Leo, an exclusive range that speaks to the depth of Mexico's wine country.

Breakfast brings its own character. As the sun hits the cliffs of Pedregal, the kitchen turns out made-to-order huevos rancheros, Cabo Benedicts, short rib birria sandwiches, and lighter açai and goji bowls — a full range that reflects the same regional pride found at dinner, without the formality.
