The kitchen is led by Chef Manuel Huerta, born and raised in Guanajuato, who brings influences from León and earlier experience at Grand Velas Riviera Maya. He has spent over seven years at Waldorf Astoria Los Cabos Pedregal, working across all culinary operations before taking the role of Chef de Cuisine at Don Manuel's. His menus are seasonal and eclectic, shaped by regional produce and a genuine connection to Mexico's food culture.
Breakfast at Don Manuel's opens with made-to-order huevos rancheros, red or green chilaquiles, short rib birria sandwiches served with consommé, and Cabo Benedicts on brioche with poached eggs and béarnaise.
