An Overwater Japanese Table in the Indian Ocean

Saoke sits above the lagoon at JOALI Maldives on Muravandhoo Island, Raa Atoll — a Japanese restaurant where the setting is as considered as the food. The structure extends out over the water on a spacious wood terrace, where organic design details — a live-edge table fashioned from a tree trunk, boulders used as decorative elements — give the space a grounded, unhurried feel. As the light drops, the low-lit pavilion becomes one of the better places on the island to watch the sun disappear into the ocean.

Forbes Travel Guide awarded Saoke a Four-Star rating, recognising both the quality of its cooking and the calibre of its hospitality — a distinction that reflects the restaurant's stated motto: "above and beyond."

The Menu: Tradition and Technique

The kitchen works across the full range of Japanese culinary traditions. Sushi, sashimi, tempura and maki rolls anchor the menu, while a teppanyaki grill — arranged as a U-shaped counter in a more intimate open-air pavilion — lets diners watch the chef sear Japanese scallops or cook Maldivian lobster directly in front of them. The robata charcoal grill handles a different register altogether.

Signature dishes define what the team is reaching for. The sumiyaki black cod is marinated in miso and sake, wrapped in a bamboo leaf and cooked over charcoal on the robata — served alongside enoki mushrooms, dashi mash potatoes, baby beetroot, asparagus and heirloom carrots. The A5 Wagyu Miyazaki striploin arrives with celeriac purée, crispy nori potatoes, soya mayo, grated daikon and sesame sauce. The focus throughout is umami — coaxed through technique rather than excess.

Sake at the Centre

Sake is not an afterthought here. The sommelier curates a selection of premium, sparkling and small-format sakes, and the menu pairs each dish with a specific recommendation. It is a thoughtful approach that treats sake with the same seriousness most restaurants reserve for wine, and it gives the Japanese dining experience at Saoke a coherence that goes beyond the plate.

The restaurant accommodates families and private celebrations equally, with a junior menu available alongside the main offering. Gluten-free and vegetarian options are part of the programme, and wine, beer and cocktails are also on hand for those who prefer them.
