This is a kitchen where classical technique and serious ingredient sourcing converge in a dining room framed by an iconic flying crystal dragon, one of the more arresting centrepieces in Macau's restaurant landscape.

The Chef Behind the Kitchen

Executive Chef Chan Tak Kwong brings a deep command of China's regional cuisines to every plate. His philosophy is patient and exacting: truly knowing each ingredient and technique before attempting to elevate it. The result is Cantonese cuisine that feels both rooted and alive — familiar in its foundations, surprising in its execution.

Dishes Worth the Journey

Two signatures illustrate the kitchen's range particularly well. The steamed egg white with grouper fillet is a study in restraint — 30-year-aged tangerine peel and vintage Hua Diao wine finishing a dish that demands near-perfect control of heat and timing to achieve its signature tenderness. On the opposite end of the spectrum, the Barbecued Ibérico Pata Negra Pork arrives triple-barbecued with maple syrup after marinating in Chinese rose wine and Chu Hou paste — crunchy outside, yielding and sweet within. The dim sum programme rounds out a menu that also extends to seasonal specialties and sea cucumber preparations.
