The story
Perched on the 31st floor of Banyan Tree Macau within the Galaxy Macau complex, Saffron is the hotel group's signature Thai restaurant — a concept recognized worldwide for its commitment to authentic cooking and graceful hospitality. The Macau outpost earned a Forbes Travel Guide Four-Star rating, with inspectors singling out its prime location, strip vistas, authenticity, and execution as a complete package that places it firmly at the top of the city's dining scene.
The interior was conceived by international firm Chhada Siembieda and Associates, and the design language is confident without being loud. Floor-to-ceiling latticed wood columns frame the space, while golden bird sculptures, dark stone walls, and chili-hued accents pull the palette together into something unmistakably Thai yet thoroughly contemporary. The dress code — smart casual, no slippers — signals the register: refined but not stiff. On most evenings, the in-house band Kheem adds another layer, moving between Thai classical music and international pop in a way that animates rather than distracts.
The menu draws from across Thailand — Bangkok, Hua Hin, Phuket, Chiang Rai — presenting regional classics refined with specially sourced ingredients, modern touches, and considered plating. The standout is the khao soy goong munggorn, a Northern-style curry elevated with fresh lobster, crispy egg noodles, aromatic kaffir lime, and coconut cream. It is the dish that keeps guests returning, and it illustrates exactly what Saffron does well: taking a beloved Thai tradition and giving it room to be extraordinary.
Breakfast service runs through the morning, while dinner and bar hours run into the evening, closed on Tuesdays. Private dining is available, and the kitchen accommodates vegetarian and gluten-free needs.
