At Lakeview Palace, the cooking begins with a geography lesson. The kitchen draws on fresh seasonal produce from the Yangtze River region, weaving together the distinct characters of Jiangsu and Zhejiang while borrowing heat from Sichuan and depth from Guangdong. The result is an innovative Jiangnan cuisine that honours tradition without being bound by it — each dish, in the restaurant's own words, "promises an exquisite surprise for the taste buds."

Behind the menus is Executive Chef Kevin Zhu, who has spent more than sixteen years mastering Huaiyang and Cantonese technique. His philosophy is precise: seasonal ingredients, authentic regional flavours, and a respect for the cultural stories embedded in the food. The craft shows in dishes such as the Classic Double-boiled Yangzhou Clear Broth Pork Meatball, the Steamed Pork Soup Dumpling with Crab Coral and Water Chestnut, and the Crispy Wagyu Beef with Chef's Signature Sauce and Finger Lime — a roster that moves fluidly between comfort and ambition.

Dim Sum Worth the Journey Alone

The lunch dim sum programme draws from Shanghai, Jiangnan, Sichuan and southern China. Forbes Travel Guide, which awarded the restaurant its Four-Star distinction, singles out the hot-and-sour Shanghainese pork dumplings and the Sichuanese mala beef puffs as must-tries — though the broader spread, which sits alongside an innovative à la carte menu, makes choosing difficult in the best possible way.

The Room and the Lake

The dining room interprets Jiangnan through emerald-green hues, auspicious cloud motifs and natural sunlight, evoking the sensation of a feast beside a beautiful lake. Floor-to-ceiling curved windows look directly onto Performance Lake, and the light-and-water shows that play across its surface provide a quietly theatrical backdrop throughout the meal.

Two beverage programmes add further dimension. A resident tea sommelier selects exclusive Chinese teas paired to each course, while a dedicated Chinese wine experience — ranging from fruity Ningxia chardonnays to bold Shandong cabernets — showcases the best of what China's vineyards are producing today.
