Five Foot Road draws its inspiration from the Sichuan-style mansion banquets of 1940s Chengdu — a tradition of refined, ceremonial dining that goes far beyond the fiery heat most people associate with the region. Housed within MGM Cotai in Taipa, the restaurant makes a compelling case that Sichuan cuisine is one of the most complex and nuanced in the Chinese culinary canon, built on what the kitchen describes as "hundred flavors beyond fiery and hot."

The Chef Behind the Tradition

At the center of Five Foot Road is Executive Sous Chef Yang Dengquan, a second-generation inheritor of traditional Chengdu Mansion Cuisine who has led the kitchen since the restaurant opened. With four decades of experience, Chef Yang brings an exacting command of Sichuan technique — knife skills, layered flavorings, and precise seasoning — that keeps the cuisine rooted in its origins while speaking to a contemporary fine dining audience.

Ingredients Sourced at the Source

The kitchen's commitment to authenticity extends to its sourcing. Fresh spices and seasonal ingredients — including well salt and wild mushrooms — are brought in directly from Sichuan and Yunnan, ensuring that the flavors on the plate reflect the actual terroir of the cuisine rather than approximations of it.

Seasonality shapes the menu throughout the year. A recent summer menu curated by Chef Yang centered on fresh ginger paired with premium land and sea ingredients. Dishes like marinated sliced pig ear with pickled ginger and gong cai in chili sauce, and steamed spotted garoupa with ginger oil, pickled cowpeas and chili, illustrate how Sichuan Chinese cuisine balances heat, acidity, and depth rather than relying on any single dimension.
