The restaurant sources exclusively the "Beijing Four-Strain Duck" from a designated farm in Mainland China, selecting birds that weigh approximately 2.3–2.4 kg for their tender, juicy meat. Each duck undergoes a labor-intensive two-day preparation process before it ever meets the custom-built red-brick oven — an oven engineered specifically for even heat distribution. For something more robust, Slow-cooked Wagyu Beef in Beijing Style sees premium Australian wagyu simmered for four hours in a rich stock, then glazed with a caramelized sauce and served alongside glutinous pan-fried yam cakes. And for those who want the duck in its most indulgent form, a version topped with shaved foie gras and Kaluga Queen caviar — described by the kitchen as "black gold" for its aroma and creamy texture — is available alongside a puff pastry accompaniment.
