The story

Crafted with passion, served with love

Where Lingnan Tradition Meets Refined Artistry

Inside MGM Macau's majestic VIP Lobby — its soaring emerald walls and gold-leaf ceiling designed to evoke a sunlit imperial garden — Imperial Court has earned a reputation as one of the city's most distinguished dining rooms. A towering dragon-carved column anchors the space, while exquisite Liuli tableware (the colored glass historically reserved for Chinese royal families) graces every table, down to the chopstick stands and napkin rings. Six private dining rooms, each dressed in its own color palette reflected through Liuli ornaments and floor-to-ceiling dividers, offer a more intimate setting for groups seeking their own world for a few hours.

Chef Homan Tsui and the Art of Lingnan Cuisine

At the heart of Imperial Court is Executive Chef Homan Tsui, who brings over two decades of experience to his craft. Rooted firmly in Lingnan traditions yet unafraid of creative reinterpretation, Chef Tsui shapes a menu that moves with the seasons and responds to the finest available ingredients. His work has graced state banquets, earned recognition from the Black Pearl Restaurant Guide and Forbes Travel Guide — which awarded Imperial Court its prestigious Five-Star distinction — and brought him in front of audiences on acclaimed productions such as Once Upon a Bite 4.

Dishes Worth the Journey

The kitchen's most talked-about creation is the crispy fried chicken skin with shrimp mousse and salted fish flakes — a dish that reimagines the Lingnan classic of handcrafted "deconstructed chicken" by swapping the traditional steamed skin for a crisped shell that contrasts brilliantly with a mousse made from three varieties of shrimp. It is precise, playful, and entirely its own thing.

Dim sum draws equal devotion. The barbecued pork buns arrive golden and crumbly, filled with Berkshire pork, while the steamed pork dumplings combine Berkshire pork with fish maw for a filling that is both luxurious and deeply satisfying. These are not afterthoughts — they are the kind of dim sum that reminds you why the form endures.

The accolades surrounding Imperial Court — Five-Star from Forbes Travel Guide, Black Pearl recognition, Tatler listings, and a wine program honored for both its list depth and by-the-glass offering — reflect a kitchen and front-of-house operating at a consistently high level, not a single inspired moment.

Imperial Court is appropriately nestled in the hotel’s majestic VIP Lobby, which was designed to resemble a garden with colossal emerald walls and gold-leaf ceiling to mimic the golden sunlight. A feast for the eyes begins upon arrival at the restaurant as you are greeted by a stunning floral arrangement. While the dragon column is the room’s conversation starter, we know your party will have more than a few kind words to say about fabulous floral arrangements and decorative glass ornaments at the table. The Macau restaurant uses exquisite Liuli (a traditional colored glass used by ancient Chinese royal families) tableware, including napkin rings and the chopstick stands. One of the hits on the menu is the crispy fried chicken skin with shrimp mousse and salted fish flakes. The Lingnan-handcrafted “deconstructed chicken” is taken to a whole new level at Imperial court. Swapping steamed chicken skin for a crispy-fried texture, a crunchy top shell is achieved that offsets the mousse made of three types of shrimps.Meticulously crafted dim sum is a diner favorite. Try the barbecued pork buns — sweet, golden buns with a crumbly crust encasing Berkshire pork — and the steamed pork dumplings — which are stuffed with Berkshire pork and fish maw.If your group craves more intimacy, reserve one of the six private rooms at the Macau restaurant. Each private dining room adopts a different color tone reflected through the tabletop Liuli ornaments and the graceful carpet. Spaces are partitioned with floor-to-ceiling dividers, creating their own culinary world for a few hours.
