Chef Tam Kwok Fung brings more than four decades of experience to the kitchen. He has served world leaders and international royalty, and in 2023 was awarded Macau's first-ever 'Chef of the Year' by the Black Pearl Restaurant Guide. His cooking draws on the best elements of East and West, always with an emphasis on seasonality, meticulous preparation, and what he describes as finely balanced flavor profiles. Two dishes in particular define what Chef Tam's Seasons does best. The Baked Stuffed Crab Shell combines fresh seasonal crab meat with broth, milk, and seasonal mushrooms into something silky and deeply savory. The Coconut Deep-fried Custards revive a nearly lost dim sum classic — crispy outside, tender within, fragrant with the milk, water, and flesh of the coconut.
