The story
Wolfgang Zwiener spent more than four decades mastering his craft at one of New York's most celebrated steakhouses before striking out on his own. In 2004 he opened Wolfgang's Steakhouse in Manhattan, and the kitchen's obsessive focus on quality turned it into an immediate success. When the brand made its international debut in Tokyo in 2014 — with the Roppongi location becoming the first outpost outside the United States — it brought the full New York steakhouse experience with it. The Signature Aoyama location takes that foundation and pushes it further, positioning itself, in the restaurant's own words, as "beyond a great steakhouse."
The philosophy here is straightforward and uncompromising. Only USDA Prime beef — the top grade issued by the US Department of Agriculture — enters the in-house dry-aging room, where it rests for around 28 days. During that time the meat's own enzymes tenderise the muscle fibres while proteins break down into amino acids, deepening the flavour considerably. The beef is then cut thick on premise and fired in a broiler at 1,600°F (roughly 900°C), producing a crust that is audibly crisp while the interior stays juicy. Steaks arrive at the table on scorching-hot plates — sirloins, rib eyes, fillets, and the signature Prime Steak formatted for two, three or four guests to share.
The Signature Aoyama menu goes further than the standard locations. Exclusive to this address are a dry-aged steak of Kumamoto Akaushi Japanese beef, a Seafood Tower assembled from premium shellfish and fish, and a Beluga Caviar Flight offering three varieties of fresh caviar side by side. Alongside the steaks, the kitchen turns out thickly sliced Sizzling Bacon, Creamed Spinach, Lobster Mac and Cheese, and a roster of serious seafood that holds its own rather than playing second fiddle.
The interior is described as neo-classic: custom mosaic ceilings, a walnut bar, suede-wrapped walls, and alabaster light fixtures create an atmosphere of considered elegance without tipping into stiffness. A glass-enclosed walk-in wine cellar stocks more than 1,000 bottles from producers around the world — a list that has earned Wine Spectator's Best of Award of Excellence for 2025, a recognition reserved for restaurants with exceptional depth and breadth of selection. Private dining rooms are available for groups who want a more enclosed setting.
The American steakhouse format extends across the full day. Lunch brings a Classic Burger made with USDA Prime beef and a dry-aged Steak Sandwich alongside daily pasta and fish dishes. An everyday Happy Hour runs in the bar area. For those who want to take the experience home, takeaway, delivery, and catering through the brand's portable kitchen service are all on offer.
