The story
Reached by winding down a secret spiral staircase from the Mandarin Bar, The Cellar is one of Tokyo's more unexpected dining destinations. Tucked inside Mandarin Oriental, Tokyo in the historic Nihonbashi district, the room is designed to evoke the atmosphere of a traditional wine cellar — think Burgundy, Tuscany, or Rioja — yet sits high above the city streets. It is an intimate, singular space built around a single large round table that seats up to ten guests, making it the kind of room that suits a milestone family celebration or a carefully considered corporate dinner equally well.
The chefs of Signature and Sense have created bespoke menus for The Cellar under the concept of "Authentic Cuisine," available in both Cantonese and French expressions. The pairing of these two distinct culinary traditions — refined Cantonese and classic French — with the hotel's extraordinary wine collection gives the room a rare breadth of character. Wines from the hotel's collection of over 6,000 bottles are available to accompany any meal, with additional beverages offered at supplementary charge.
That collection is overseen by Akihiko Nosaka, Director of Wines, who joined Mandarin Oriental, Tokyo in 2018. In 2023, Nosaka won the title of Best Sommelier of Japan at the 10th Pan-Japan Best Sommelier Competition — a recognition granted by the Japan Sommelier Association that underscores the seriousness with which wine is approached here. He leads a team of five sommeliers and brings what the hotel describes as a deeply artistic approach, blending winemaking tradition with modern global influences.
The Cellar's wine programme earned Wine Spectator's Best of Award of Excellence in 2025, a distinction that reflects both the depth of the list and the expertise behind it. Beyond private dining, The Cellar hosts an ongoing series of intimate wine events. The Sommelier's Table — limited to just eight guests — has featured rare Burgundy producers including Domaine Leflaive and Domaine Dujac, with each edition offering an encounter with exceptional bottles in a setting that feels genuinely appropriate for them.
