The story
Al Maniero presents authentic Valdostana cooking in Issogne, where Chef Giovanni Paladini directs the kitchen operations. He works closely with Emanuela, who oversees guest relations, to maintain a relaxed yet attentive service standard. Their combined efforts create a setting where the focus remains squarely on the food and the comfort of those dining.
The menu showcases preparations rooted in local tradition, starting with items like the flan of seasonal vegetables. Signature plates include tagliolini al tartufo bianco and a robust carbonade accompanied by polenta. Visitors frequently order the pairing of lardo di Arnad with mocetta and chestnut honey, or sample the full range through a five-course Valdostana tasting menu priced at thirty euros. Desserts feature a warm apple cake finished with meringue and vanilla sauce.
Outdoor seating on the summer terrace provides space for meals in fresh air. The establishment offers private rooms for overnight stays, along with access to a spa facility. Practical touches include reserved parking and vegetarian menu options, while the policy allows small dogs to join their owners inside.
