The self-styled pizzaricercatore — pizza researcher — has spent years pushing the boundaries of what pizza can be, earning the maximum 3-slice recognition from Gambero Rosso, Italy's most authoritative food guide. That rating reflects not just quality ingredients but a genuinely distinctive vision: "Curiosity makes passion rise, taking shape in a unique and unmistakable view of my pizza. To tradition and culture, I add innovation and research."
What sets Bosco apart is his development of proprietary pizza formats, each with a registered name and a distinct texture. The Mozzarella di Pane® is soft and pillowy; the PizzaCrunch® and Pizza DoppioCrunch® deliver an extraordinary crispness baked in the pan; and the Aria di Pane® — literally "Air of Bread" — is the showpiece, light and airy in a way that reframes what pizza dough can achieve.
