Origins and daily rhythms

Massimo Perna founded Alcova del Frate in Verona in 2005 to showcase modern Veronese cuisine. He began the venture by serving tartines, horse meat, and carefully selected wines before expanding into a full dining room. The kitchen still operates inside one of the city’s oldest palaces, where he bakes slow-levain bread twice daily using organic flour. This steady attention to fundamentals shapes every plate, grounding his culinary philosophy in patience rather than trend.

The restaurant’s recent recognition by ilGolosario as a Faccino Contento + address highlights how consistently the kitchen balances land and sea. Guests frequently order the original recipe risotto simmered in Amarone wine, which draws deeply from regional viticulture. Other frequent requests include bigoli tossed with braised donkey ragù and the house’s signature horse meat cuts, prepared either as a tartare or seared with aged Parmigiano Reggiano. Handmade potato gnocchi appear alongside rich liver pâté ravioli, proving that Italian cooking remains anchored to time-tested methods.

A twenty-year renovation expanded the original osteria layout while preserving stone walls and low ceilings. The space now accommodates both intimate tables and larger gatherings without losing its quiet character.
