Owner and pizzaiolo Klaus Palumbo follows the Associazione Verace Pizza Napoletana disciplinary, treating the dough fermentation process with meticulous care. Every base rests on premium ingredients like Slow Food presidia and certified DOP products. This commitment to traditional Italian cooking ensures that each creation meets exacting regional benchmarks.
The Dama pizza layers hillside tomato paste, buffalo stracciatella, dried tomatoes, and basil pesto over a crisp crust. Guests often order the lasagna, which combines a slow simmered ragù with Agerola fiordilatte, beef polpettine, and thirty month aged Parmigiano Reggiano. The fried pizza version features smoked provola from Agerola, organic tomato sauce, buffalo ricotta, and crispy cicoli.
