A Pizzeria That Doesn't Stand Still

Open since 2008 in Scorzè, just outside Venice, Instabile has built a reputation that reaches well beyond the local neighborhood. The restaurant earned its first Gambero Rosso spicchio in 2016 and its second in 2020 — recognition that reflects years of deliberate, principled work rather than a sudden leap in ambition.

Flour as a Starting Point

The dough at Instabile is where the philosophy becomes tangible. The kitchen works closely with Azienda Agricola Mauro Celeghin, sourcing heritage Veneto wheats — Grano Mentana and Grano Piave — alongside a Fumetto di Mais, varieties chosen for their depth of flavour and digestibility. From Molino Moras comes the Prelibata blend, combining Teff, Quinoa, Chia seeds and hemp into a protein-rich dough with a tall, golden cornicione that is crisp at the edge and soft within. The result is pizza that carries a genuine sense of place.

Slow Food at the Table

Instabile is among the first pizzerias recognised by the Slow Food Presidia network — a distinction earned in 2011 and maintained ever since. The ingredient list reads like a map of Italian artisan production: Pomodoro Fiaschetto di Torre Guaceto, Guanciale al Pepe di Mora Romagnola, Carciofo Violetto di Sant'Erasmo, Formaggio Storico Ribelle, Asiago Stravecchio, Capocollo di Martina Franca, Oliva Infornata di Ferrandina. The menu rotates with the seasons, ensuring at least one Presidia product is present at any given moment.

The beverage selection follows the same logic — producers chosen for their alignment with Slow Food values, so that what's in the glass tells as coherent a story as what's on the plate.

From the Ground Up

In 2015, the team planted the Bosco della Cerva in nearby Noale — more woodland than kitchen garden. It supplies firewood for the oven, grows seasonal produce without chemical treatments, and shelters a small vineyard and farmyard animals. The long-term vision is for it to become a venue for cultural and food events, connecting guests directly to the land that feeds them.

More Than a Dining Room

The space at Instabile doubles as a living gallery, with works by local artists displayed permanently on the walls. A dedicated in-house library changes its thematic colour each year, and guests are invited to write dedications inside the books. It is an unusual touch — and a genuine one — that gives the room a character you don't find in most pizzerias.
