The story
Agritur Calvola delivers straightforward country cooking to the hills overlooking Riva del Garda, built upon decades of careful land management. Luigi Santoni returned from America in the late forties after his relatives remained to work the terraced slopes. Bruno and Lucia Santoni formalized that agricultural routine when they opened their doors on June sixth, nineteen ninety-one. Their son Matteo now directs the kitchen, preserving the original methods while coordinating the daily operations.
The kitchen relies on a notably short supply chain that starts on the one point six hectares of vines and the three point two hectares of olive groves surrounding the estate. Cured meats, vegetable preserves, and house-made pâtés move directly from the harvest into the preparation area. Diners frequently request the carne salada served both raw and cooked, paired with canederli alla trentina that reflect the enduring style of country cooking across the valley. The ilGolosario guide recently highlighted this direct farm-to-table model as a defining strength of the establishment.
Guests settle into the internal restaurant beneath its stone arches before moving outside to claim a table on the sunlit terrace. The six guest rooms feature liberty and art deco interiors that contrast gently with the rugged exterior stonework. A wood chip heating system installed in the two thousand seven maintains consistent warmth without drawing on external fuel sources. Daily service runs through the summer months, while weekend bookings sustain the quieter winter calendar.
