Gambero Roso

Authentic Ligurian seafood in Vernazza's harbour square, with fish from local boats and handmade pasta. Recognised by The World's 50 Best Restaurants.

The story

Crafted with passion, served with love

On Piazza Marconi, steps from the small harbour of Vernazza, Gambero Rosso has long been the address for honest, ingredient-led Ligurian seafood in one of the Cinque Terre's most storied villages. The setting is a historic building that retains its original character inside, with tables spilling onto the characteristic little square facing the water — outdoor dining as it should be, without contrivance.

The kitchen's philosophy is straightforward and uncompromising: the menu follows the catch. Anchovies come directly from local Cinque Terre fishermen; mussels are grown in the Gulf of La Spezia. These two ingredients anchor the antipasti, appearing in the signature Misto di acciughe alla Gambero Rosso and in a warm seafood salad that changes with the season. The Crostone di Burrata con acciughe di Monterosso draws on one of Liguria's most prized local products.

Handmade Pasta and the Sea

Fresh pasta, shaped by hand in Vernazza, runs through the first courses. The Tagliolino all'aragosta is the kitchen's own recommendation, while Paccheri alla Gambero Rosso — with tomato and red mullet fillet — has become a signature of the house. Trofie al pesto Ligure is made with pesto prepared fresh each day, and Mandilli (thin lasagne sheets) arrive with prawns. For those who want to stay closer to tradition, Pansotti al sugo di noci offers a purely Ligurian vegetarian alternative.

Second courses follow the day's catch: sea bass, gilt-head bream, turbot, and amberjack prepared on the grill, baked in the Ligurian style with vegetables, or cooked in a salt crust. The Fritto di paranza brings together scampi, prawns, squid and vegetables in a light batter, while grilled octopus and tuna tagliata with caramelised Tropea onions round out a menu that covers the full range of the local sea.

Recognition and a Sense of Place

Gambero Rosso's approach — bridging Ligurian tradition with a more contemporary sensibility in preparation — earned it a place among The World's 50 Best Restaurants in 2004, a remarkable distinction for a restaurant rooted so firmly in a single small fishing village. That recognition speaks to what the kitchen has always done well: taking the best of what the sea and the territory offer, and letting those ingredients speak clearly.

Gluten-free options are available across the menu. A well-chosen wine list includes local Vermentino and the rare Sciacchetrà DOC, both natural companions to this style of Ligurian seafood cooking.
