Its gastronomic philosophy is built entirely on the quality of raw ingredients, with a selection focused on two highlights: exceptionally fresh seafood from Mazara del Vallo and premium-grade meats. Must-try dishes: rolled potato with runny egg and Erborini cheese fondue with Gewürztraminer; salt cod, agretti, and Alsatian Crémant sauce; egg pasta tagliolini with goose speck, saffron, green vegetables, and chili pepper; roasted guinea fowl with Madeira wine; pan-seared fish fillet with asparagus, sesame, and mustard.
