The story
At L'Evoluzione del Gusto in Mira, just west of Venice, Roberto Travaglini has built his pizzeria around a single, uncompromising idea: that great pizza begins long before it reaches the oven. That commitment has earned the recognition of Gambero Rosso's Pizzerie d'Italia guide, which awarded the restaurant 2 slices — a mark of distinction that places it among Italy's most serious pizza addresses. The restaurant is also a Slow Food Presidium, a designation that speaks directly to how ingredients are chosen and producers are supported.
What sets the kitchen apart is the depth of its approach to leavening and flour. Travaglini works exclusively with madre (sourdough) starter and indirect doughs — a slower, more demanding method that rewards patience with a lighter, more digestible result. The flour selection reads like a miller's catalogue: Petra 9, Petra 3, Petra 1, organic hemp flour, multi-grain, spelt, buckwheat, kamut, semolina, and more, each chosen for what it contributes to texture and flavour.
