The story
Chef Davide Botta describes himself plainly: "Sono un cuoco senza pregiudizi, con un pizzico di anarchia che riconosce la legge dell'equilibrio imposto dalla natura" — a cook without prejudice, with a touch of anarchy, bound only by the law of balance that nature imposes. That philosophy shapes every plate at L'Artigliere, the restaurant-with-rooms that earned two forks from Gambero Rosso in 2022 and has since relocated to a new home in Nave, in the province of Brescia.
The à la carte menu is structured around tasting paths of Davide's own design. Starters lean into Italian tradition — a classic charcuterie board with pickled vegetables — alongside more considered compositions: Carnaroli rice cooked in pumpkin water with liquorice, gorgonzola and amaretto; and a tomato prepared by osmosis with sage, paired with a biscuit and pineapple sorbet. The complete tasting menu is priced at €35 per person.
Desserts hold their own. A torta di rose with mascarpone and pink-pepper ice cream, a chocolate and amaretto crème caramel, and a saffron ice cream affogato with meringue, candied Taggiasca olives and chocolate each carry the same instinct for unexpected but grounded pairings. A short list of dessert wines — including a Recioto di Soave and a Sauternes — rounds out the close of the meal.
A recurring Sunday format called La Domenica del Risotto — the Sunday of risotto — speaks to the restaurant's roots in the rice-growing flatlands of the Veneto and its ongoing relationship with one of Italy's most demanding preparations. The APERISOTTO concept extends that same ingredient into a more convivial, aperitivo-style format, showing that Davide's kitchen is as comfortable with informality as it is with fine dining.
L'Artigliere also holds membership in the JRE (Jeunes Restaurateurs), a European association that selects young chefs of proven quality — further confirmation that this is a table worth the drive to Brescia.
