The story
The name says everything. Incàlmo is a Venetian dialect word for grafting — the technique of joining two plants so they grow into something stronger than either alone. It is the guiding idea behind this restaurant inside Este's Hotel Beatrice, where the kitchen brings together past experiences and fresh thinking, letting them meet, clash and ultimately fuse into something new.
The Hotel Beatrice is a landmark of Este, a small city in the Euganean Hills of the Veneto. Its original 1950s furnishings give the dining room a warm, grounded character, while the team behind Incàlmo brings what they describe as a young and international hospitality sensibility to the space. The result is a place that feels rooted yet alive — suited equally to a long lunch or an unhurried dinner, with outdoor seating available when the season allows.
The restaurant frames its offer around three pillars it calls Le Gemme, i Tralci, i Semi — the gems, the shoots, the seeds — a poetic shorthand for a menu that is balanced, generous and plural. The thread running through every plate is respect for raw ingredients and a genuine love of good food. The cellar receives equal attention, treated as a companion to the kitchen rather than an afterthought, and the dessert course is considered a destination in its own right.
That seriousness of intent has not gone unnoticed: Gambero Rosso, Italy's most authoritative restaurant guide, awarded Incàlmo 2 Forks — recognition that places it firmly among the worthwhile tables of the Veneto.
