The kitchen is led by chef Matteo Poggi, whose menu is built on a foundation of seasonal, essential ingredients. “Every ingredient, fresh and carefully selected, is worked with techniques that enhance its essence without unnecessary artifice,” the restaurant states. The result is a cuisine that balances tradition and innovation, grounding itself in history while looking forward. This is Emilian cooking at its most honest.

The menu reads like a love letter to Bologna. Starters include a potato and mortadella flan with Parmesan sauce, and a beef tartare with Bolognese pesto. Pasta is the heart of the meal: tagliatelle alla Bolognese, seven-layer green lasagna, and tortellini in double meat broth “come una volta” (like it used to be). Second courses feature braised beef cheek in Sangiovese, a classic Bolognese roast chicken from the Artusi cookbook, and a veal cutlet alla Bolognese. Desserts stay close to tradition with “latte in piedi,” zuppa inglese, and a rice cake.

The dining room is warm and welcoming, with service that seamlessly connects kitchen and front-of-house. Al Cambio is open for lunch and dinner Monday through Friday, and dinner only on Saturday; Sunday is closed. It’s a place where the past feels present, and the food speaks for itself.
