A Family Table, Fifty Years in the Making

Salice Blu opened on 16 August 1973, when Mino Gandola and his wife Flora started a restaurant on Via per Lecco in Bellagio, a quiet road above the lake with views that stop conversation. Half a century later, the address has not changed. What has changed is the generation at the stove: in 2005, Mino's son Luigi returned from seven years at the Grand Hotel Villa d'Este in Cernobbio — one of the grande dame properties on Lake Como — and took over as chef-patron at just 22 years old. His wife Camilla Panzeri runs the dining room and experience programme, and together they have turned a beloved local trattoria into one of the most closely watched Italian fine dining addresses on the lake.

Luigi Gandola: Craft Rooted in Place

Luigi grew up foraging the forests and gardens around Bellagio alongside his father. That early education — learning which wild herbs to pick, when porcini appear in the Prealpi woods, how to read the lake's freshwater catch — became the foundation of a cooking philosophy he later refined in European kitchens before bringing it home. His own words put it plainly: "Luxury is being able to serve only what is at the peak of its potential, only when nature allows it. It means saying no to asparagus in October and yes to porcini mushrooms I pick myself in the forests of Bellagio."

The menu shifts with the seasons. Ingredients come from the family kitchen garden, from local dairy producers, from fishermen on Lake Como, and from small suppliers Gandola knows personally. Pasta is made by hand for every service. Stocks and sauces follow slow, artisanal timelines. The presentation is precise without being theatrical — colour, texture and proportion in balance, with occasional botanical touches drawn from the chef's own study of officinal herbs.

Among the signature dishes the restaurant shares publicly: a beef fillet en croûte with a herb-and-Parmesan crust made from garden-grown thyme, rosemary and santoreggia, finished with Colonnata lard and a traditional balsamic vinegar sauce. It is a dish that shows the kitchen's method clearly — classical technique, local identity, nothing extraneous.

The Space and the Cellar

The restaurant is arranged across three distinct environments: a main dining room with an open kitchen, an intimate wine cellar suited to private dinners, and a panoramic terrace in the garden with a view over the lake. The cellar holds over 600 labels — a collection that earned Salice Blu the Wine Spectator Best of Award of Excellence in 2025, a recognition that reflects both the depth of the list and the seriousness with which wine is treated here. Camilla Panzeri, also a certified water sommelier, extends that attention to mineral water pairings, a quietly distinctive detail of the tasting experience.

Beyond the Table

Salice Blu describes itself as an experience restaurant, and the offer goes well beyond the dining room. Cooking classes with Chef Gandola, truffle hunts in the hills above Bellagio, boat excursions on the lake (including a solar-powered vessel), wine tastings and visits to local producers are all part of what the restaurant calls Bellagio Experience. Private chef services are available both locally and, for Italian diaspora events, in the United States. Catering for weddings and corporate events extends the kitchen's reach across the territory.

Internationally, Gandola has represented Italian cuisine at embassy events in Uzbekistan as part of the Settimana della Cucina Italiana nel Mondo, and was a finalist at the Prix Culinaire International Taittinger in Paris in 2009 — recognition that the Italian cuisine being made in this lakeside village holds its own at a European level.
