The story
Sundara sits directly on Jimbaran Bay, part of the Four Seasons Resort Bali, with its own dedicated beach entrance and what the restaurant describes as Bali's longest beachfront pool as its backdrop. It operates as a full all-day destination — relaxed poolside lunches give way to a dinner menu that the kitchen describes as "packed with umami," and the bar and beach club run alongside until the early hours.
Chef de Cuisine David Gavin leads the culinary team, bringing over 15 years of fine dining experience shaped by what he describes as a Swedish reverence for the sea and a deep affection for Indonesia's aromatic spices. Alongside him are Sous Chef Wayan Angga Umaniasa, Executive Pastry Chef David Peduzzi, and Komang Agus Sudewa, the team's self-described resident wine lover — a fitting role given that Sundara holds a Wine Spectator Award of Excellence (2024), recognising the depth and curation of its cellar.
The all-day menu is broad and confident, built around open-fire and BBQ techniques. Sharing cuts include an Australian Black Angus Tomahawk, a coffee wood-smoked whole chicken, and a grilled lobster served with lobster butter and crispy garlic. The kitchen also leans into Jimbaran's fishing village identity: a Jimbaran-style whole snapper arrives with sambal matah and lemon basil, while the local section features Balinese fried rice, grilled mahi-mahi in yellow coconut broth, and satay ayam. Sourcing is described as local and sustainable throughout.
The monthly Chef's Table is where the kitchen's more focused voice comes through. Chef Gavin honours Jimbaran's fishing heritage with a curated mixed seafood experience, pairing hyper-local ingredients with refined technique in what he frames as "a seamless dialogue between land and sea, memory and flame." The evening begins with aperitifs and canapés at TELU before guests move to Sundara by buggy for the dinner itself.
Sundara's master mixologists draw on Indonesian history for their cocktail programme, presenting what the bar calls "a liquid journey through the ages." Regular programming includes the Sundown Social Cocktails series, live performances by Rio Sidik, and the Sunday Pink Brunch. The setting — open, beachfront, facing Jimbaran Bay sunsets — makes the atmosphere as much a part of the offer as the food and drink.
