The restaurant appeared in The World's 50 Best Restaurants list five consecutive times between 2002 and 2007, reaching as high as 14th in the world in 2002. The accolade placed Bukhara alongside the most celebrated dining rooms on the planet, and the consistency it signals is the real story.

The Food and the Fire

Bukhara's identity is built entirely around the tandoor — the clay oven that defines North Indian cooking at its most elemental. The cuisine here is robust and unapologetic: slow-cooked meats, hand-ground spices, and the char and smoke that only live fire produces. It is tandoori cooking treated not as a category but as a craft, executed at a level that earned the restaurant its place among globally acclaimed dining destinations alongside ITC Maurya's other celebrated kitchens, Dum Pukht and Avartana.

The restaurant is housed within a hotel that takes its design seriously. The ITC Maurya's interiors draw on Mauryan iconography — a towering bronze of Emperor Ashoka in the gardens, a lobby dome modelled on a Buddhist chaitya, and a collection of works by artists including M F Husain, Tyeb Mehta, and Krishen Khanna. Bukhara inherits this atmosphere: substantial, historically grounded, and quietly assured.
