The story
At Elements, part of the Canaves Oia Epitome property in Oia, fine dining meets one of the most dramatic backdrops on earth. The restaurant's floating deck extends over an infinity pool, framing unobstructed views of the Santorini sunset that draw guests from across the globe. Local volcanic stone and white Cycladic rendered walls set a tone that is simultaneously rooted in the island and quietly refined.
Executive Chef Tassos Stefatos leads the kitchen with a menu that is deliberately hard to categorise. The culinary philosophy is modern European with a clear Greek soul — flavors described by the restaurant itself as "simple yet complicated, familiar yet extraordinary new." The element of surprise is built into the structure of the meal, which is offered in degustation format: the Ta/Ste The World menu, the Ta/Ste Nature menu, and a terrace version of the former, each progressing through distinct stages designed to challenge and delight the palate in turn.
The approach earned Elements a Wine Spectator Best of Award of Excellence in 2024 — recognition that reflects not only the depth of the cellar but the seriousness with which wine is woven into the experience. A dedicated sommelier is on hand each evening to suggest pairings by the glass, whether wine, cocktail, or juice, matched to each course.
Dress code is smart elegant, and the restaurant opens for dinner only, Tuesday through Sunday from 7:30 pm. Securing one of the coveted floating deck tables — the "Experience Tables" — requires an early reservation, and the restaurant is candid about this: book ahead for priority. The setting rewards that effort. The warmth of wood against volcanic rock, the glow of the Aegean at dusk, and a kitchen sending out Greek-Mediterranean cuisine at its most considered make for an evening that is difficult to replicate anywhere else on the island.
