Christian Bau discovered his passion for cooking at fourteen in the Black Forest before mastering classical techniques abroad. After several trips to Asia, he developed the bau.stil style, blending European foundations with premium Japanese ingredients. Sous chef Sarah Bau now supports this direction, focusing heavily on crustaceans and shellfish.
