The Chef's Menu is the heart of the experience, a procession of courses that draws on the Western Cape's produce while weaving in the bold, layered flavours of Asian fusion cooking. Namibian red crab is paired with a tamarind curry. Wild boar is treated across multiple textures — smoked broth, kimchi, crackling, and a bacon chawanmushi that borrows the Japanese steamed-egg technique. The signature Tuna 'La Colombe' has become something of a landmark dish, its name on the menu a quiet assertion of identity.
