At the heart of Le Clarence's kitchen stands Chef Andrea Capasso, Italian-born and Parisian by calling. He began his culinary training at just fourteen, later graduating from the prestigious ALMA school — founded by Italian legend Gualtiero Marchesi — where he mastered the classics of both French and Italian cuisine. His craft was further honed under the mentorship of Riccardo Camanini at Lido 84 before he made France his home. Having evolved through every rank over six years at Le Clarence, Capasso now leads the kitchen as Executive Chef, bringing a signature finesse to land-and-sea pairings, a mastery of texture, and an instinctive, almost improvisational creativity that defines the restaurant's modern gastronomy.
At Le Clarence, there is no set menu — only thoughtfully composed sequences built around exceptional, seasonal produce. Lunch menus begin at €150 for three courses, while the six-sequence Inspiration dinner reaches €430 per person. Signature dishes from the à la carte selection speak volumes: lacquered veal sweetbreads with sauce grenobloise, hand-dived scallops with beetroot gwell and oscietra caviar, blue lobster grilled over barbecue with kabocha squash, and venison fillet prepared façon Rossini with black Périgord truffle.
