Crafted with passion, served with love

A Hundred Years in the Making

The plaque at the entrance reads "Maison de famille depuis 1924," and those words carry real weight. It was in 1924 that Georges Bocuse, father of the legendary Monsieur Paul, established himself in Collonges-au-Mont-d'Or, in a restaurant on the banks of what locals call "la Saône bucolique," just a few minutes from Lyon. What followed was a century of French cuisine shaped by one of its greatest figures — a man who trained under la Mère Brazier and Fernand Point before helping put Lyon on the world's gastronomic map.

In 2024, the restaurant celebrated its centenary. That milestone alone speaks to the depth of what has been built here.

Tradition in Motion

Paul Bocuse himself embraced Brillat-Savarin's maxim: "To invite someone is to take charge of their happiness for as long as they are under your roof." That philosophy remains the animating spirit of the house today.

The restaurant is now led by Vincent Le Roux, chef de famille of the third Bocuse generation, alongside a kitchen brigade of exceptional distinction. Chefs Gilles Reinhardt and Olivier Couvin both hold the title of Meilleur Ouvrier de France, while Benoît Charvet is a World Pastry Champion. Eighty people work here, morning and evening, five days a week, with the shared purpose of making every meal a celebration.

The spaces themselves have been recently renovated — dining rooms bright with clarity, a gleaming new kitchen, and upstairs salons transformed into refined private settings. The iconic pistache-and-raspberry façade remains as vivid as ever, a promise of what awaits inside.

This commitment to excellence earned the restaurant a place among The World's 50 Best Restaurants, a recognition that reflects the international reach of Bocuse's influence and the enduring quality of Lyonnaise gastronomy at its finest.

A Place for Every Occasion

Arriving at Paul Bocuse — whether for a birthday, a business dinner, a marriage proposal, or simply the desire to return to a place you love — the experience begins before you sit down. Valets attend to your car, smiling staff take your coat, and in the courtyard, bronze likenesses of the great chefs who surrounded Monsieur Paul — Antonin Carême, Alain Chapel, André Pic, Raymond Olivier — stand as quiet witnesses to the tradition you are about to share.

The salons on the upper floor — Salon Fernand Point, Salon Paul Bocuse, Salon Raymonde Bocuse — offer intimate settings for private gatherings, each an elegant frame for the French cuisine that defines this house.

What has changed is considerable: new recipes, new spaces, new energy. What has not changed is the rigour, the warmth, and the conviction that every guest who crosses this threshold deserves something memorable. As the restaurant itself puts it: "Tout a changé, mais rien n'a changé."
