Restaurant Mota sits inside Anneberg Kulturpark in Nykøbing Sjælland, surrounded by forest, fields, and the clear waters of Isefjorden. The setting is not incidental — it is the whole point. Chef and owner Claus Henriksen has built the restaurant around a single, uncompromising idea: that the fertile soil of Odsherred and the producers who work it are the true foundation of everything on the plate.
"With one foot firmly planted in Odsherred's fertile soil and the other in the clear water of Isefjorden," as Henriksen puts it, Mota treats local and sustainable ingredients as non-negotiable — part of its DNA rather than a marketing choice. What the kitchen picks, forages, harvests, or grows is given a dish of its own. Nothing is subordinate; everything is the point.
Henriksen describes his approach through three interlocking values: respect for ingredients, relentless curiosity, and the pursuit of perfection. The goal is not to impress with technique for its own sake, but to give guests an experience that stays with them — and to honour what the landscape around Nykøbing Sjælland actually produces.
That commitment has earned Mota a Michelin star, and the White Guide has placed it at Global Masters level for 2026. The White Guide's recognition specifically singles out Henriksen's relationship with vegetables — carrots, beets, and cabbage elevated to leading roles in seasonal menus like Mørkt & Sart (Dark & Tender), where nearly every component is grown, foraged, or produced locally in Odsherred and its immediate surroundings. These are not supporting players. In Henriksen's hands, they are the stars.
The menus at Mota shift with the seasons and with what the land offers. The kitchen works closely with local food producers — described as "friends of the house" — and the cooking reflects a terroir-driven Nordic sensibility that is grounded rather than showy. Lunch is served on Fridays and Saturdays; dinner runs Thursday through Sunday in the atmospheric surrounds of Anneberg Kulturpark.
