The story
In the spring of 2010, chef Patrick Lieffroy found what he had long been searching for: Hesselhuset, a century-old building in Nyborg with forest, nature, beach and sea right at its doorstep. After a thorough renovation, the house became the setting for Restaurant Lieffroy — a place Patrick describes simply as "our home." The goal, stated without fanfare, is to keep quality uncompromisingly high and prices down to earth.
It is a family operation in the most literal sense. Patrick's father, Jean Louis, came out of retirement to work alongside him in the kitchen. Front of house is run by Patrick's wife, Helle, a trained waiter, certified sommelier and 2025 Falstaff Sommelier of the Year, who also oversees the wine list. Having one member of the family on each side of the counter, as they put it, gives the restaurant a coherence that is immediately felt by guests.
Patrick's European training reads like a tour of the great French kitchens: stints at three-Michelin-starred Buerhiesel under Antoine Westermann, La Côte St. Jacques with Jean-Michel Lorain, and Troisgros with Michel and Pierre Troisgros, before returning to Denmark. That foundation in classical French technique shapes everything that comes out of his kitchen, yet the results are anything but museum pieces.
The White Guide awarded Restaurant Lieffroy its Masters level distinction in 2026 — the guide's highest tier — singling out a course of seared foie gras with cherries stuffed with rose hips, crunchy hazelnut, summer truffle and garden herbs. The guide's reviewers, rarely given to superlatives, called it "the most perfectly temperature-cooked piece ever" and noted that the flavors were "light-years away from the often-overused traditional serving." Patrick's own comment on the dish: "It gives such a very good earthy flavor." That modesty, and that precision, define the kitchen.
The current menu offers a three-course format and a seven-course gourmet experience. Dishes such as turbot en croûte with white asparagus, green peas and mussel sauce with Noilly Prat, and ballotine of French pigeon with confit raviolis, ramson and morel sauce illustrate the kitchen's European sensibility — classical structure, seasonal produce, nothing extraneous. Optional additions include Kaluga caviar, Danish black lobster with new potatoes and green strawberries, and a selection of Danish and French cheeses.
Helle's wine pairing is designed course by course, described by the restaurant as "inspiring, creative, innovative and sometimes even challenging." Guests can choose individual glasses or a full pairing alongside the seven-course menu; a non-alcoholic pairing is also offered. The list, recommended by Star Wine List, combines wines chosen specifically to complement Patrick's cooking with bottles the couple simply love — often in limited quantities.
Restaurant Lieffroy has been named Restaurant of the Year 2021 and Chef of the Year 2022 by the Danish Dining Guide, and received the Best Feelgood Experience of the Year 2022 from White Guide. Helle earned Best Service of the Year 2018 from the Association of Danish Food Critics and Best Personal Service 2024 from the Danish Dining Guide. The recognition is consistent, but the atmosphere remains warm and personal — fine dining that feels, deliberately, like being welcomed into someone's home.
