The story
Founded in 1932, Melsted Badehotel sits directly at the water's edge just outside Gudhjem, surrounded by sandy beach, cliffs, protected forest, and the kind of stillness that draws guests back year after year. The chalk-white facade at the end of a small side road has become one of Bornholm's most recognisable sights, and the hotel's 21 individually decorated rooms — each with sea views — reflect a careful renovation where classic seaside-hotel character meets Nordic minimalism: historical wallpapers, tall panelling, and classic Danish design furniture.
The dining room is where Melsted Badehotel truly distinguishes itself. The experienced partnership of Daniel Kruse and Troels Madsen runs a kitchen that the White Guide 2026 singled out at "very fine level," noting that the pleasure response is activated the moment you arrive — and that it is fully delivered upon by the time you leave. Gastronomy, service, setting, and atmosphere come together in what the hotel itself describes as a higher unity, and on that point the critics agree.
The room menu gives a sense of the kitchen's sensibility: dishes like white-wine steamed line-caught mussels with herbs and cream, classic beef tartare of North Jutland free-range beef with truffle mayo and truffle chips, and half a lobster served simply with two kinds of mayo and grilled lemon. The day's catch arrives with grilled pointed cabbage, dill, and toasted almonds. Dessert might be rhubarb compot with vanilla, baked white chocolate crumble, and cold-bowl ice cream from Isfabrikken in Snogebæk — a local producer on the island. The wine list is serious without being ostentatious, ranging from Franken Rieslings and Burgundy premiers crus to Barolo single vineyards and a handful of prestige bottles for the occasion.
Voted Denmark's best seaside hotel in 2026 by the national OpdagDanmark poll, Melsted Badehotel offers fine dining in a setting where you can walk barefoot from the table to a private pier.
