The inn is run by Katrine and Emil Rask Bahr, a couple who previously worked at Hærværk in Aarhus and brought that experience — and considerable energy — to this rural setting. Emil's time in Aarhus gave him a broad fluency in wine pairing; he steers the wine selections with confidence, without tipping into the overly experimental. Katrine and Emil together drive the place with what the White Guide describes as great enthusiasm, energy, and skill.
The cooking balances the familiar and the unexpected in a way that invites everyone in. A five-course menu with snacks, wine pairings, and bubbles lands well under a thousand Danish kroner per person — a striking proposition given the level of execution.
The meal opens with small snacks that immediately signal the kitchen's intent: a crispy cauliflower floret on an onion purée seasoned with a house-blended mild curry; a piece of pork neck confit in duck fat with a "berbeque" sauce of blackcurrants, garden trimmings, and sea buckthorn foraged from the nearby shore.
One dish that drew particular attention from the White Guide was the tomato: a grilled coeur-de-boeuf tomato with wild garlic oil, garlic flowers, and fried sage, brought together with a creamy, rich blanquette seasoned with fennel seeds. A carpaccio course layers lightly grilled beef with crisp salad and grated Vesterhavsost, finished with anise hyssop, bitter nasturtium, pickled ramsons buds, and wood sorrel — details that make the difference between competent and memorable.
Emil's wine pairings match the ambition on the plate. A white verging on orange — Nimbus Albus by Kamara Pure from Thessaloniki — arrives alongside the tomato course, its spiced notes and fresh crispness locking into the tomato's richness and the aromatic herbs.
