Come evening, the mood shifts to something more considered. The dinner menu moves through snacks, starters, intermediate courses, mains and desserts, each course built around seasonal produce. Current dishes give a clear picture of the kitchen's direction: white asparagus with hollandaise and herbs, cold-smoked Faroese salmon with fresh cheese cream and dill-marinated cucumber, stuffed plaice with fennel crudité and mussel sauce, baked cod with seasonal vegetables and potato compote, and a lemon fromage with mascarpone ice cream, wood sorrel and meringue. Côte de boeuf and young cockerel with morel sauce round out the mains for those wanting something more substantial.
